'treffen' and 'anschießen' can both mean that a shot or a ball reaches a person, an animal, or a target. 'treffen' is general and only says that the target is reached. It can be used in sports, when throwing, or when shooting. 'anschießen' is narrower: with a shot, it means to wound someone or an animal, but not kill them.
