'der Pilot' and 'der Projektleiter' can both refer to a person who steers or leads something difficult. 'der Projektleiter' is the normal and precise term for someone who plans, organizes, and is responsible for guiding a project through to the end. 'der Pilot' only fits here figuratively: you imagine the person as someone who safely steers a complex undertaking through a difficult situation. Learners may confuse the words because both have to do with leadership. At work and in official situations, however, 'Projektleiter' is usually the right choice. 'Pilot' sounds more figurative and is not suitable for every project role.
