Refers to what comes directly after the next item in a sequence. It is used almost exclusively in relation to time expressions.
Wir treffen uns nicht diese Woche, sondern erst übernächsten Montag.
We're not meeting this week, but only on Monday after next.
The word is made up of the prefix 'über-' and the adjective 'nächst' (next). Here, 'über-' means 'beyond' or 'past.' So 'übernächst' (next but one) is literally what lies beyond the next one.
Das übernächste Haus in der Straße hat einen blauen Anstrich.
The house after the next one on the street is painted blue.
This adjective is used almost only with time expressions. Common combinations are 'übernächste Woche' (the week after next), 'übernächster Monat' (the month after next), 'übernächstes Jahr' (the year after next), or with weekdays such as 'übernächsten Samstag' (Saturday after next).
Unser Urlaub beginnt erst im übernächsten Monat.
Our vacation doesn't start until the month after next.
'Übernächst' (next but one) describes a position in a sequence of time. It is not used for a spatial sequence, except in very rare, almost literary cases.
Die nächste Haltestelle ist unsere, die übernächste ist am Bahnhof.
The next stop is ours; the one after that is at the train station.
next / nearest
'nächst' and 'übernächst' are easy to confuse because both talk about a future time. But the difference is important: 'nächst' means the immediately following point in time. 'übernächst' means the point in time after that, so not the next one, but the one after the next. If today is Monday, 'der nächste Montag' is in one week and 'der übernächste Montag' is in two weeks. You should pay close attention to this, especially with appointments.
Die Klassenarbeit schreiben wir nicht nächste Woche, sondern übernächste Woche.
We are not writing the class test next week, but the week after next.
Die Ärztin hat erst nächste Woche wieder freie Termine.
The doctor does not have any available appointments again until next week.
