'öffnen' and 'aufschieben' can both mean that you open something. 'öffnen' is general and only says that something is open or accessible afterward. 'aufschieben' describes the movement more precisely: you slide something to the side or upward, for example a window, a sliding door, or a bolt. That is why 'aufschieben' only fits when the opening really happens by sliding. For a normal door, a bottle, or a book, 'öffnen' is more natural.
