'schlafen' and 'ausschlafen' both have to do with sleep. 'schlafen' simply describes the state: you are not awake and are resting. 'ausschlafen' means that you sleep until you have had enough sleep and feel rested. Often there is no alarm clock or early appointment involved. So you can sleep without sleeping in, for example if you have to get up early.
Am Sonntag kann Lisa endlich ausschlafen, weil sie keinen Wecker stellen muss.
On Sunday, Lisa can finally sleep in because she does not have to set an alarm.
