'entfernen' and 'aussortieren' both mean that something is not supposed to stay. 'entfernen' is more general: you take something away, regardless of whether it is on its own or belongs to a group. 'aussortieren' is used when you check several things and remove some of them from a set because they are broken, old, or unsuitable. When tidying up, packing, or checking things, 'aussortieren' is often more natural. If only one specific thing needs to go, 'entfernen' fits better.
