Origin as a participle
The adjective 'beschaffen' (constituted) is the past participle form of the verb 'beschaffen' (to obtain/procure something). As an adjective, however, it has its own meaning and describes the nature or property of something, that is, how it is 'made'.
EXAMPLE
Die Oberfläche des Tisches ist sehr glatt beschaffen.
The surface of the table is very smooth in texture.
Sentence structure
This adjective is almost always used predicatively, meaning after a verb such as 'sein' (to be). Using it directly before a noun (attributively) is very rare and often sounds unnatural.
EXAMPLE
Der Boden in dieser Region ist sehr steinig beschaffen.
The soil in this region is very rocky in nature.
Typical collocations
'Beschaffen' (constituted) is often specified more closely by an adverb that describes the type of property. Typical combinations are 'gut/schlecht beschaffen' (well/poorly constituted), 'so/anders beschaffen' (constituted like this/differently), or 'merkwürdig beschaffen' (strangely constituted).

'organisieren' and 'beschaffen' can both refer to the structure of something, but they are used very differently. 'organisieren' is a verb and describes an action: someone puts something in order or prepares something. 'beschaffen', on the other hand, describes what something is like, for example the nature of a material, a room, or a situation.
