'der Stahl' and 'der Edelstahl' both refer to a strong iron-based material. 'Stahl' is the more general term. 'Edelstahl' is a special type of steel, often especially pure and frequently rust-resistant. That is why you hear 'Edelstahl' especially in connection with kitchens, cutlery, sinks, or medical equipment. The words can be confused because stainless steel is also steel. If the exact type does not matter, 'Stahl' is enough. If rust resistance, hygiene, or a smooth, high-quality surface is important, 'Edelstahl' sounds more natural.
