'scheitern' and 'einstürzen' can both show, in a figurative sense, that something no longer works. 'scheitern' directly says that a goal or plan is not achieved. 'einstürzen' describes, figuratively, that a system, idea, or hope suddenly collapses. The word sounds stronger and more dramatic. For ordinary plans, 'scheitern' is usually more natural; 'einstürzen' fits better when something big or important suddenly loses all support.
