'Erfroren' (frozen to death / frostbitten) is the past participle of the verb 'erfrieren' (to freeze to death) and can also be used as an adjective. When you use it to describe a completed event, you need 'sein' as the auxiliary verb.
Die Rosen sind während der kalten Nächte erfroren.
The roses froze during the cold nights.
In gardening, 'erfrorene Triebe' (frost damaged shoots), 'erfrorene Knospen' (frost damaged buds), and 'erfrorene Blüten' (frost damaged blossoms) are typical collocations. The word can therefore refer specifically to individual parts of a plant.
Im Frühjahr sollte man die erfrorenen Triebe abschneiden.
In spring, you should cut off the frost damaged shoots.
In colloquial speech, 'fast erfroren' (almost froze to death) is often used as an exaggeration when someone was very cold. 'Fast' shows that freezing to death did not actually happen.
Beim Warten auf den Nachtbus bin ich fast erfroren.
I almost froze to death while waiting for the night bus.
