The word is composed of 'Nobelpreis' (Nobel Prize) and 'Träger' (bearer/holder). A 'Träger' is someone who carries something. A 'Nobelpreisträger' (Nobel laureate) is therefore literally a person who 'carries' the Nobel Prize, i.e. has received it.

'Preisträger' and 'Nobelpreisträger' both refer to a person who has been honored for a special achievement. The difference lies in the type of prize: a 'Preisträger' can have received any kind of prize, for example a school prize, a literary prize, or a sports prize. A 'Nobelpreisträger' has specifically received the Nobel Prize. The words can be confused because every Nobel laureate is also a prizewinner. But not every prizewinner is a Nobel laureate. If you mean the Nobel Prize, 'Nobelpreisträger' is more precise.
