'bis' and 'seitdem' both describe time, but they look in different directions. 'bis' names an endpoint: something lasts only until that point in time. 'seitdem' names a starting point in the past and says that something has continued to be true or has kept happening from that point onward. That is why the words stand in clear contrast: 'bis Montag' (until Monday) ends on Monday; 'seit Montag' (since Monday) or 'seitdem' (since then) begins there. Learners confuse them because both have to do with periods of time. Ask yourself: Is it about the end? Then 'bis' fits. Is it about the beginning and the time after it? Then 'seitdem' fits.
