'fest' and 'standhaft' can both have to do with a strong attitude or conviction. 'fest' mainly describes how strongly someone is convinced of something: they believe in it and do not doubt it. 'standhaft' additionally says that someone sticks to their position even though there is pressure, problems, or temptation. So you can be 'fest überzeugt' (firmly convinced), but 'standhaft' fits especially when someone does not give in. 'fest' often appears directly with words like 'überzeugt' or 'glauben', while 'standhaft' more often describes a person's behavior.
