'gut' and 'befriedigend' both describe a positive or usable quality. The difference lies in the strength. 'gut' is clearly positive and can also refer to high quality. 'befriedigend' is more like: It is okay and sufficient, but it is not especially good. The words can be confused especially in evaluations or grades because neither is negative. If you are truly satisfied and convinced, 'gut' fits better. If something is only acceptable, 'befriedigend' is more precise.
