Writing numbers
When 'hundert' (hundred) is part of a larger number under one thousand, everything is written as one word. For example, '101' is written as 'hunderteins' (one hundred one) and '125' as 'hundertfünfundzwanzig' (one hundred twenty-five).
EXAMPLE
Das Ticket kostet genau hundertvierzehn Euro.
The ticket costs exactly one hundred fourteen euros.
Approximate quantity
The form 'Hunderte' (hundreds), with -e at the end, is used to express an indefinite large quantity. You then say 'Hunderte von' (hundreds of) + a plural noun.
EXAMPLE
Hunderte von Menschen warteten vor dem Stadion.
Hundreds of people were waiting in front of the stadium.
Colloquial exaggeration
In everyday language, 'hundert' (hundred) is often not meant literally, but as an exaggeration for 'very often' or 'a lot.' The context makes it clear that no exact number is meant.
EXAMPLE
Ich habe noch hundert Dinge zu erledigen, bevor ich gehe.
I still have a hundred things to do before I leave.

'viel' and 'hundert' can both express a large amount. 'viel' is imprecise and is especially suitable for amounts that you are not counting exactly, or when the exact number is not important. 'hundert' is actually the exact number 100. Colloquially, however, 'hundert' can also be used as an exaggeration to mean very many. In that case, you do not always mean exactly 100. So the difference is: 'viel' stays general, while 'hundert' sounds more concrete or stronger, especially in expressions like 'hundert Fragen' (a hundred questions).
