A male person who comes from Korea, has Korean citizenship, or is of Korean descent.

'Der Koreaner' is a noun of the N-declension. This means it gets the ending '-n' in all cases except the nominative singular: 'den Koreaner' (accusative), 'dem Koreaner' (dative), 'des Koreaners' (genitive).
Ich habe gestern mit dem Koreaner gesprochen.
I spoke with the Korean yesterday.
The word family includes the country 'Korea', the feminine form 'die Koreanerin' (Korean woman), and the adjective 'koreanisch' (Korean). The adjective is used for everything that relates to Korea.
Ich liebe koreanisches Essen.
I love Korean food.
The ending '-aner' is often attached to a country name to form the masculine term for an inhabitant. You also find this pattern in 'Amerikaner' (American) or 'Mexikaner' (Mexican).
Ein Afrikaner und ein Amerikaner saßen im Café.
An African and an American were sitting in the café.
South Korean
Koreaner and Südkoreaner can both refer to a man from South Korea. However, Koreaner is the more general term for a person connected with Korea, whereas Südkoreaner explicitly specifies South Korea. Use Südkoreaner when the country should be named precisely rather than merely inferred from the context.
Der Koreaner aus Seoul arbeitet seit einem Jahr in unserem Büro.
The Korean man from Seoul has been working in our office for a year.
Der Südkoreaner aus Seoul arbeitet seit einem Jahr in unserem Büro.
The South Korean man from Seoul has been working in our office for a year.
