Schatz and Schätzchen can both be affectionate forms of address. Schätzchen, however, is the diminutive form and therefore sounds more cutesy; depending on the tone, it can also sound childish or condescending. Schatz is the more neutral choice, while Schätzchen is deliberately more playful.
