Word composition
The word is made up of the compass direction 'Süd' (south) and the word 'deutsch' (German). So it describes everything that relates to the southern part of Germany.
EXAMPLE

Lowercase spelling
Adjectives derived from geographic names and ending in '-sch' are written in lowercase. So you write 'der süddeutsche Dialekt' (the southern German dialect), not 'der Süddeutsche Dialekt'.

Bavarian
'bayerisch' and 'süddeutsch' can both describe something from the south of Germany. 'bayerisch' is more specific and refers to Bavaria, for example to people, food, culture, or dialect from Bavaria. 'süddeutsch' is broader and means southern Germany in general, so not only Bavaria. The words can be confused because Bavaria is in southern Germany. But if you really mean Bavaria, 'bayerisch' fits better. If several southern regions are meant, or if the exact region is not important, 'süddeutsch' sounds more natural.
