'der Kurs' and 'der Workshop' can both be events where you learn something. A course is often planned over several sessions and may also involve more traditional instruction. A workshop is usually shorter, more intensive, and very practical. The participants take an active role, try something out, or develop results together. The words can be confused because a workshop can also be a kind of course. If the practical part and active participation are important, 'Workshop' sounds more precise. If you are talking generally about instruction on a topic, 'Kurs' fits better.
