The word is made up of 'Werk' (work) and 'Statt' (an old word for 'Stätte' or 'Ort', meaning place). So a 'Werkstatt' is literally a 'place of work'.

A Kurs is usually a systematically structured class or series of lessons. A Werkstatt places more emphasis on participants doing practical work themselves under guidance and creating something. Use Kurs for the series of lessons and Werkstatt for collaborative practical work.
