'braten' and 'anbraten' both belong to cooking with hot fat. 'braten' describes the whole cooking process: the food is cooked in a pan or in the oven until it is done. 'anbraten' usually means only the first, short step over high heat, so that meat or vegetables become brown on the outside. After that, they can be cooked further, for example by braising or finishing in the oven. Learners easily confuse the words because both can happen in a pan. As a memory aid: 'anbraten' is short and at the beginning, while 'braten' can be the whole process.
