'Anstehend' (upcoming/pending) is the present participle of the separable verb 'anstehen' (to be pending/to be next). The verb means that something is next in line or is on a list. The adjective therefore describes things that 'gerade anstehen' (are currently pending).

We have to complete the pending tasks quickly.
This adjective is very often combined with nouns that describe appointments, tasks, or events. Typical examples are 'anstehende Prüfung' (upcoming exam), 'anstehender Termin' (upcoming appointment), or 'anstehende Entscheidung' (pending decision).

'Anstehend' (upcoming/pending) is almost always used attributively, that is, directly before a noun. The predicative form ('Die Reise ist anstehend' — the trip is upcoming) is rare and sounds formal. Instead, people usually say: 'Die Reise steht an' (the trip is coming up).

All pending projects were discussed at the meeting.
This meaning is a technical term from geology. You can recognize it because it always refers to stone, rock, or the subsurface. In normal everyday life, this use practically does not occur.

Bevorstehend and anstehend both describe something that will happen soon. Bevorstehend places more emphasis on how close an event is in time, while anstehend often highlights the next appointment or a task that needs to be dealt with soon. Both are possible for an appointment; choose according to the emphasis you want.
