'Apropos' (speaking of) usually stands at the beginning of a sentence or clause. It introduces a new thought, but it does not change the normal word order of the following main clause (subject in position 1 or directly after 'apropos').
Wir müssen noch einkaufen. Apropos, der Supermarkt hat heute länger geöffnet.
We still need to go shopping. Speaking of which, the supermarket is open later today.
You use 'apropos' (speaking of) to change the topic elegantly in conversation. It signals to the person you are speaking with: 'What you just said reminds me of something else.'
Mein Auto ist kaputt. Apropos, kannst du mich morgen zur Arbeit fahren?

In a more formal or older style, 'apropos' (with regard to) can also be used with a noun in the genitive. It then means 'regarding' or 'concerning.'
