Describes something that you first have to get used to because at first it is unfamiliar, strange, or not immediately pleasant.

The taste of the new drink is a bit of an acquired taste.
The word is made up of 'Gewöhnung' (getting used to something) and 'bedürftig' (in need of). Literally, it means that something 'requires getting used to' or is 'in need of getting used to'.
Die neue Software ist kompliziert und daher sehr gewöhnungsbedürftig.
The new software is complicated and therefore really takes some getting used to.
This word is often a polite and indirect way to say that you do not like something, at least not yet. Instead of 'Das Design ist hässlich' (The design is ugly), you can say: 'Das Design ist etwas gewöhnungsbedürftig' (The design is a bit of an acquired taste).

The adjective is very often used predicatively, that is, after a verb like 'sein' (to be), 'wirken' (to seem), or 'finden' (to find). It is often softened with 'etwas' (somewhat/a bit) or 'ein bisschen' (a little).

'seltsam' and 'gewöhnungsbedürftig' can both say that something seems unfamiliar at first. The difference is in the evaluation. 'seltsam' describes something that is strange and perhaps creates a slightly unpleasant feeling. 'gewöhnungsbedürftig' means: it is unfamiliar or not immediately pleasant at first, but you may be able to get used to it. Learners may confuse the words because both fit new or unfamiliar things. If you only want to say that something seems odd, use 'seltsam'. If you want to say that you need time to find it normal, 'gewöhnungsbedürftig' is more precise.
