'sauber' and 'hygienisch' both have to do with cleanliness. 'sauber' mainly means that you cannot see any dirt. 'hygienisch' goes further: it means that something is clean enough to be safe for health, for example in a kitchen, bathroom, or hospital. Learners may confuse the words because hygienic things are usually also clean. But a table can look clean and still not be hygienic if there are still germs on it.
