'der Aufstand' and 'die Ausschreitung' can both have to do with violence, protest, and a crowd of people. 'Aufstand' more often describes the whole organized movement against a government or authority. 'Ausschreitungen' are individual violent acts or disturbances, often during a demonstration, a game, or a protest. They are easy to confuse because riots can happen during an uprising. But not every 'Ausschreitung' is an 'Aufstand', because there is often no political goal or fixed organization.
