Word structure
The word is made up of 'ein' (one) and '-fach'. '-fach' expresses multiplication (as in 'zweifach' — twofold). So 'einfach' literally means “single-fold” or “not multiple,” which explains the basic meaning “uncomplicated.”

Adjective vs. particle
